Description
The ‘yellow wine’ or Vin Jaune from the vines in the beautiful Chateau Chalon village in the Jura – it is truly unique due to its grape, the method of vinification, its longevity and complexity. The wine spends 6 years in the Mouillard cellars at the end of this time the wine has oxidized with the wine in the barrel evaporating – this is the ‘angels share’.
On the nose walnuts, curry powder and bruised apple – it has a vibrant acidity that is long and saline.
You could crack open now with a long decant and serve alongside some Comté, it is equally intriguing to just sip on its own and enjoy! For those who like to age wine, this has the potential to go long, mellowing as it ages.
