It’s so difficult to get hold of any Charlie Herring wine, so when the man behind the wines, Tim Philips, offered us a small allocation we snapped it up as soon as we could!
A Fermament 2019 is a little different from the last release in that it is not an orange wine. It is 95% Sauvignon Blanc and 5% Chardonnay and was picked super ripe in mid October before it was de-stemmed and spent five days macerating. Fermentation took place naturally and lasted five months, all of this time in stainless steel. The wine was then racked to steel for another three months before being bottled unfiltered, and then spent a further nine months in bottle under cork.
We won’t say much about this wine as it is one that gets the imagination and senses working overdrive. It’s honest and above all a fascinating drink – one to be shared with the closest friends.
