Ximenez-Spinola work with just Pedro Ximenez to produce a selection of wines, from still to dessert wine, sherry, vinegar and brandy! They have become masters of their trade. Once harvested the grapes for this wine spend no less than 21 days exposed to the sun, which slowly dehydrates them, concentrating the sugars and providing an elegant, natural sweetness. The wine is fermented in American oak barrels. This wine is vibrant amber in colour, ripe grape and raisin on the nose. Fresh palate with a velvet entry and well integrated acidity. Dates, figs, raisins and a lengthy finish. Simply delicious with desserts made from bitter chocolate, or desserts with dried fruit such as Christmas pudding!
