The Montevertine Le Pergole Torte is considered one of the finest expressions of Sangiovese in the world. The owner of Montevertine Sergio Manetti planted two hectares of vineyards in 1967. Increasingly dissatisfied with the local bureaucracy and specifically, the insistence that white grapes needed to be used in the production of Chianti Classico, Manetti set out to make his wine from 100% Sangiovese and created Le Pergole Torte. Made from a selection of the estate’s best fruit, Le Pergole Torte undergoes alcoholic and malolactic fermentation in cement. The wine is aged for one year in French oak barriques followed by a second year in cask, racked from time to time to keep the wine clean and bottled unfiltered.
