Description
This Valpolicella Classico Superiore is produced with grapes from vineyards located in Monte Santoccio. After harvest grapes are left to rest for 40 days before being pressed. This ancient technique of drying (appasimiento) allows dehydration of the grapes. The wine is broad and elegant with notes of ripe red fruit and strawberry compote, these lead on to balsamic notes as well as anise and wild fennel. The palate is fresh and full supported by fine tannins.
