Raul and Maite have managed to seek out and rescue indigenous varieties and vineyards that were abandoned due to rural depopulation. These grapes come from several plots located in the Alberche de Cebreros valley – 50-70 year old bush vines grown on granitic/sandy soil. Vineyards are all managed naturally without using herbicides. The wine spends 6 months in French oak. This wine is an excellent expression of the Albillo grape, it has balsamic notes along with dried white flowers and almonds. Unctuous but also citrus with some salinity and a delicate twist of bitterness to lift the finish.
Pair to stuffed piquillo peppers or fish sashimi.
