Philippe Bornard is considered one of the foremost producers in the Jura. He farms 7 hectares of vineyards around the village of Pupillin. He produces wine with as little intervention as possible and produces a large amount of different cuveés as he does not blend together the same grapes from different parcels. This cuvee can be called Les Gaudrettes, depending on the vintage. It is grown on marl soils using biodynamic practices, direct press, wild yeast ferment and aged in old barrels for a year minimum.
The 2015 vintage is broad, concentrated with a vibrant minerality, notes of cider, spices and walnuts finishing in mouthwatering citrus and smoky notes.
