Description
The Jean Bourdy Savagnin is made in the traditional sous voile Jura style. The wine is aged in old barrels with a veil of yeast on the surface of the wine. This is the same process his Vin Jaune undertakes, but the wine is taken from the barrels after 4 years rather than the 7 required for the Vin Jaune. This veil of yeast inhibits and controls the process of oxidation, whilst also imparting a distinct nutty characteristic.
