From the village of Poilly Sur Serein, Eleonoré has just taken over the family estate. The family now have around 13 hectares in Chablis and Petit Chablis. Eleonoré works in harmony with her environment and with respect of the land and the fruit, and with the aim of expressing the unique Chablis terroir. Vinification is traditionally carried out in controlled stainless steel vats and the wine spends time on its lees until racking which takes place in April. The limestone clay brings a beautiful mineral power to her wines.
