Dominique Lucas’s domaine Les Vignes De Paradis is made up of 10 hectares of organic vineyards (worked dynamically) on the shores of Lake Geneva. Dominique Lucas mainly grows Chasselas, but has some tiny holdings of Chardonnay and Pinot Noir. The vineyards are divide into 27 different lots, with harvest taking up to 2 and a half months, due to the slow ripening of the Chasselas.
This cuvee is made from Chardonnay, which is fermented in a concrete pyramid. The wine has gorgeous minerality and a delicate texture.
