Winemaker Fabrice Dodane owns 6 hectares of vines in Arbois and Cotes du Jura AOC. The Domaine achieved organic certification in 2012. All wines are fermented with native yeasts either in tank or neutral barrels and the reds don’t have any sulphur added and the whites only have minimal amount. The Saint Pierre Chardonnay is made in the ‘ouille’/topped up style. Grapes are grown on white marl/chalk soil on south to south east exposition. The wine spends 12 months in 500 litre old oak barrels before bottling.
