Description
Cascina Degli Ulvivi is a closed-cycle farm that has been practising biodynamic agriculture for 30 years. They have 22ha of vineyards, cereals, vegetable gardens, fruit orchards, animals and practice agriturismo. Stefano Bellotti the man behind the farm passed away in 2018, so this will be part of the last wines he produced.
The A Demua is made from an old vines co-planted parcel in Filagnotti comprising of Timorasso, Verdea, Bosco, Riesling Italico and Chasselas. The wine is fermented and aged for ninety days on grape skins. A truly elegant wine with a complex nose suggesting white fruits, rosemary and orange zest; a dry and elegant wine, with a long finish.
An excellent obituary for Stefano was written by Doug Wregg on Les Caves de Pyrene blog.
