Domaine de Colette is managed by Jacky Gaulthier and family who practice “lutte raisonnée” which is working in harmony with the environment. The bush trained vines average 40 years old are grown on granitic soil and harvest is all carried out by hand. The wine is vinified using the traditional technique of the region (no crushing or destalking) to obtain the aromas and flavours that are typical of the region. The wine does not go into oak barrel which allows the delicate red fruit character to fully express itself.
Match to cold meats, simple chicken dishes or fish in a creamy sauce.
