Description
The Château de La Selve Beaulieu cuveé is made from a blend of 50% Cabernet Sauvignon, 25% Grenache and 25% Cinsault. The grapes are source from three different organically and biodynamically farmed vineyards. After a fermentation from ambient yeasts the wine is aged for 2 years in 228 l. burgundy barrels and demi-muids (500 l. barrels) and then 1 year in concrete tank. It is then bottled unfiltered and unfined.
Tasting Note
Expressive and rich nose combining black fruits, spices and garrigue. On the palate it has freshness, good generous fruit with silky tannins and a nice length. Excellent with rustic dishes, prime rib, entrecote or game. Drinking well now, it has the potential to age for the next decade and beyond.
