Caiaffa Primitivo is produced from organic vineyards in the North of Puglia. Caiaffa winery is based around the coastal town of Cerignola in the beautiful Tavoliere delle Puglie. The vineyards are managed without pesticides or insecticides to encourage a balanced ecosystem. They actively support the local insect life, as they protect the grapes.
The grapes are harvested manually and after a spontaneous fermentation on its skins for 20 days. The wine is matured for 3 months in oak barrels.
The Caiaffa Primitivo has bright fresh black and red fruit aromas. On the plate it is creamy with a long spiced finish.
