COS was established in 1980 by three friends: Giambattista Cilia, Cirino Strano and Giusto Occhipinti. Based in the South Eastern Sicily, they specialise in wines made from indigenous grape varieties and using traditional ageing vessels such as amphorae.
The COS Zibibbo in Pithos is made from fruit from 20 year old vines. The must undergoes spontaneous fermentation on its skins in clay amphorae.
Ripe floral tropical notes are underpinned by pithy tannins. Great with Mediterranean salads.
