Eric Bordelet took over the family business in 1992 after working in top restaurants and in the world of wine. He has around 23 hectares of apple and pear orchards which are farmed organically. Organic farming methods have been used since 1996 to grow the best fruit. The farm is in southern Normandy, located on the upper Briovian schist ‘Grand Cru’ sedimentary rock. Harvesting is manual and selective according to maturity of the fruit from September to December depending on variety.
This is a dry Normandy cider made biodynamically. It is mellow and lively with a refreshing acidity. 15 types of apple go into the blend making it interesting an moorish! Perfectly paired to savoury crépes or a picnic in the sunshine.
